Authentic Sérya Recipe – A Traditional Way (Step-by-Step, No Fuss)

You do not simply cook certain things, you evolve into them. One of them is Sérya.

When you have ever stood in a kitchen and watched the onions turn golden slowly, the spices have begun to smells fantastic and something plain has started to be special, then that is just what it feels like to make serya.

  • 1 cup rice (basmati is a good one, but no necessity)
  • 2 onions, chopped
  • 4 cloves of garlic, minced.
  • 2 tomatoes, chopped
  • 1-2 green chilies (omit, if you are not fond of heat)

Spices:

  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1/2 tsp black pepper.
  • Salt (pour in a little at a time)

Other:

  • 2 tbsp oil or ghee.
  • Fresh coriander (it is optional, though pleasant in the end)

You may ask me (assuming you want to):

  • A teaspoonful of ginger paste.
  • One spoon of tomato paste.
  • One or two tablespoons of yogurt.
  • Scarcely the smallest pinch of cinnamon or nutmeg.

Step-by-Step (The Real Way)

The first step is to prepare everything first.

Get ready things hastily before you begin to cook:

  • Butcher the meat.
  • Rinse the rice (do not omit it, it comes in handy)
  • Chop everything

It does not necessarily have to be flawless. It just will not get you later, and you will be in a hurry.

Step 2: Begin with Onions (Make It your Time)

Prepare oil or ghee on the pan.

Add onions and cook them gradually. This is an important part that people do not realize.

No, no, do not keep turning them over. Sit them and stir at intervals and wait till they turn a proper golden brown. Not pale. Not burnt. It is in the middle somewhere.

Followed by the addition of garlic. Wait a minute.

Add the meat and stir it with the onions.

Step 7: Finishing Touch (Minor and yet important)

  • You can add yogurt in case you desire it to be creamy.
  • Add fresh coriander.
  • Try it (never forget to taste it)

When something does not seem right, add or take away a little bit of salt or spice.

And then leave it to rest a few minutes, and serve.

Rushing onions is an abomination. Any error in this, and the entire dish is flat.

The friend of the world is low heat. Rapid preparation is useless here.

Chicken is least complicated. The best tasting is Lamb. Beef is in the middle of the way.

The following time you can pass on chilies. Simple fix.

  • Probably naan or roti.

It has to do with making something simple, letting it have its own time, and it is about enjoying the process.

The initial attempt may not be fantastic. That’s normal.
